Monty Couple Opens Capriotti’s Sandwich Shop in Princeton, and to Open a Second in Monty Promenade Soon

Montgomery couple Urvi Jatania and Jimit Dharia opened the first of four new Capriotti’s Sandwich Shops on Jan. 20 in the Princeton Shopping Center. Their second location will be in the Montgomery Promenade, currently under construction on 54 acres off Route 206 in the Skillman section of Montgomery Township — just north of Princeton Airport.

Jatania and her husband emigrated from Mumbai. After college, they had owned several restaurants in Florida, and had a construction business while living in central New Jersey. Jatania has a background in medicine, and works as a director in Global Clinical Operations for Bristol Myers Squibb.


After purchasing a home in Skillman three years ago, they wanted to own businesses closer to where they live. “We picked Skillman because they have the best schools and we love the community,” she said. Their 10-year-old son attends Lower Middle School.

They chose Capriotti’s for its high-quality sandwiches. “There is a need for our area to have some good sandwich shops.” While Princeton has at least three good take-out sandwich shops — Olives, Hoagie Haven, and Lucy’s Kitchen — Montgomery Township recently welcomed Jersey Mike’s Subs next to Starbucks.


Jatania says Capriotti’s is the only shop offering premium Wagyu steak sandwiches and the Capastrami hot pastrami sub. Another speciality is The Bobby.


The chain opened its first shop in Washington, DC, in 2013. Joe Biden, then the vice president, surprised customers when he arrived during the grand opening to buy subs for himself and President Obama. Biden ordered Italian subs and a Bobbie — a signature turkey sub with cranberry sauce, and stuffing.
